yummy recipe:
Lemon Raspberry Muffins
2 c. flour
1 c. sugar
1 tbsp. baking powder
1/2 tsp. salt
2 eggs, lightly beaten
1 c. light cream
1/2 c. vegetable oil
1 tsp. lemon extract
1 1/2 c. raspberries, fresh or frozen (or blueberries)

In large bowl, combine dry ingredients. Combine
the rest (except berries) in a separate bowl. Stir the wet into the dry until just moistened. Fold in the raspberries. Spoon into greased or lined muffin tins and bake at 400 for 18-20 minutes or until golden brown. Makes 18 muffins.

You wouldn’t think making muffins could be such an ordeal! But this particular batch took no less than 5 trips into the store and 5 days! We were going grocery shopping on Saturday, so we stopped by Janet’s to get a copy of the recipe since my recipe books are still packed in some unknown box...at the grocery store, I remembered the cream but didn’t remember the raspberries until we were packing the car. Dave ran back in & bought some for me. After dinner that night, I asked the boys to come help me make them, then couldn’t find the lemon extract...I must have tossed it when we moved because it was expired or something. Heavy sigh.. I asked Dave to get me some on his way home from work on Monday. He brought me
lemon juice, LOL! Poor guy, thought I was joking when I told him it was the wrong kind. Tuesday, I had to return something at Walmart, so I thought I’d grab it while I was there. I found swimming
trunks, a shirt and a pair of shorts for Josh, some bath toys & baby food for Amy and allergy medicine for all of us. I remembered the lemon extract too late as I was checking out & had 2 cranky kids because I took too long browsing & it was lunchtime. UGH! Dave went out Tuesday night to grab something we needed for dinner &
came home with lemon extract. HOORAY!! Wednesday morning, Jacob & I started to make the
muffins-and wouldn’t you know, we had about a tablespoon of vegetable oil & we needed a half cup. Good golly Miss Molly! We had to go get Jacob some new shoes anyway...so we packed up the kids, found some shoes (even got laundry soap which we were also out of) and went across the street to the grocery store and got the oil! Dave asked if I was SURE that was all...I think so? The only thing I hadn’t checked was the baking powder, I saw we had some, I just didn’t look to see how much. Back at home, we again started the muffins. I couldn’t believe it-we were almost out-but we barely had enough to squeeze out this batch. So-was it worth all the craziness? My belly says YES!
